Peanut Butter Cookies

Fair warning – these are not gluten free, sugar free, low fat, vegan, or anything other excuse you can think of to justify eating 7 of them. You just have to get them in you and enjoy every last bite. They are a treat, and they are DELICIOUS.



  • 1/2 cup margarine or butter (I recommend butter 🙊)
  • 1/2 cup peanut butter (either type, crunchy = more peanut buttery taste)
  • 1 1/4 cups all-purpose flour
  • 1/2 cup white sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla

Beat butter and PB in a big bowl with an electric mixer until smoothly blended. Add 1/2 of the flour, the sugars, the egg, baking soda, baking powder, and vanilla. Beat it UP until thoroughly mixed together. Add in remaining flour.

Preheat oven to 375 F (convection setting if your oven has it). Shape dough into 1 inch balls and place 2 inches apart on an un-greased cookie sheet. Flatten delicately by criss-crossing the balls with the tines of a fork.

BAKE – 7-9 minutes, or until bottoms lightly brown

Note: Large glass of cold milk is highly recommended. Enjoy!!!
